Can the WebDataGrid Scroll Horizontally? If so, how do I get it to work. If not, then why in the world doesn't it? I'm using 10.1, what control can I use instead?

Yes, the WebDataGrid supports horizontal scrolling. You do not need to do anything.
If the total columns width is bigger than the WebDataGrid with a horizontal scroll bar
is shown automatically.

What I want is for the other columns not to shrink to oblivion but to move off screen and a horizontal scroll bar to appear. Is there anyway to get it to do this?
Try it on the infragistics sample page. Make one of the columns wider. The other columns shrink down. You only get a scrollbar when the other columns can't be shrunk any more and are forced off the page. Then you get a scrollbar that only allows you to view the shrunken columns and re-size them

Looks like I am not following your requirement. The scrollbar appears if you have a DefaultColumnWidth set for each columns. If the total of the column widths is greater than the grid with the horizontal scrollbar appears.
You can also leave the DefaultColumnWidth as empty which will behave like "auto". If you have a width set off the control itself then the columns will stretch to the size of its data and create a scrollbar if needed. Otherwise the grid will be as large as the data is as mentioned in the following post.

Thanks. Setting the DefaultColumnWidth did it. Once I set that it scrolls like I expect it to and as a side benefit it fixed an issue I was having with IE when I paged.
But this doesn't auto resize the columns based on the width of the largest item in each column if that width is larger than the defaultcolumnwidth. how can we auto resize each column based on the width of the largest item in each column?
